Recipes for the Restless with Adrian Li and Diana Nguyen
Green Apple Curry
This is your chance to master the art of cooking and learn how to create a restaurant quality meal at home!

Renowned chef and restaurant owner Adrian Li shared his personal recipe and demonstrated live how to cook a green apple curry. Adrian was joined by comedian Diana Nguyen who cooked along and served up laughs. View the video of the event, ingredients and recipe below.

Ingredients List

Serves four to six people 
PASTE
150gms Jalapeños
300gms Shallots
6 Garlic Cloves
2 Lemongrass Sticks
1tsp Turmeric Powder
8 Thai Lime Leaves
1 bunch coriander

CURRY
1L Apple Juice
1L Kara Coconut Cream
40gms Thai Basil
250gms Palm Sugar
2 Green Apples
100mls Fish Sauce
2 Limes

Your choice of protein (we recommend fish, scallops or tofu)


Recipe
  1. Cook Jalapeños on open flame to blacken. Then remove steam and roughly chop
  2. Chop shallots, lemongrass, garlic and coriander root
  3. Place all paste ingredients, including turmeric powder and lime leaf, into blender and blitz (add oil to the blender if needed)
  4. Add oil into pot, heat to medium and add curry paste
  5. Once curry paste becomes fragrant and dark green in colour, add palm sugar (smash the palm sugar and cut into shards) and fish sauce
  6. Once dissolved, add apple juice and leave to reduce by half
  7. Peel and slice apples, discarding the core
  8. Place apples, coconut cream, basil and curry paste into blender and blitz till smooth
  9. Pour back into pot to heat
  10. Adjust seasoning and add lime juice
